The purpose of this qualitative and ethnographic research is to analyze Mennonite gastronomy using oral history, documentary and field research techniques to describe the collective heritage of traditional recipes and their history throughout the diaspora
of this group. It also aims to understand and analyze the adaptation to the environment where the daily life of families takes place, describing the culinary evolution by mixing traditional ingredients with flavors of mestizo culture to create new recipes with intercultural influence. The term “meno-mex” was created to refer to this fusion that has transcended borders to position itself as a valuable contribution to the intangible cultural heritage derived from the State of Chihuahua to Latin America.
